Cooking with Albert Bartlett Purple Majesty Potatoes

Albert Bartlett Purple Majesty potatoes are naturally purple. The dark purple skin conceals its bright purple flesh. The potato has naturally high levels of antioxidants and anthocyanins. This is a very healthy super food, packed with vitamins, minerals and antioxidants as well as being amazing to look at. There are no shocks with the taste though. They have a lovely familiar full potato flavour and aroma.

Purple Majesty goes very well with roasted vegetables, chicken dishes and fish, especially meaty fish like monk fish but also sweeter fish like trout. The flavour is excellent with a rare beef fillet and with vension.

Purple Majesty is good microwaved, which locks all the colour and goodness in. It is exceptional as a small baked potato or roasted whole in its skin.

Boil, steam or microwave

Peel and cut potatoes into even sized pieces or simply rinse and cook with skins on.

Boiling: place in pan and cover with cold water. Bring to boil and cook gently for 15 minutes until tender.
Steaming: place in steamer over boiling water and cook until tender - approx 10 - 15 minutes depending on size.
Microwave: place in microwaveable container with a few tablespoons of water, cover and cook until tender. Approx 10 minutes for 500g potatoes. Leave to stand for 2 minutes. (800 W oven)
Small baked or whole roasted: wash the potatoes, do not peel. Place on a hot baking tray and cook in the oven for 45- 50 minutes or until soft in the middle. For whole roasts just brush lightly with olive oil before baking.
