The Vivaldi is a relatively new variety that is grown in differing climatic regions so that it is fresh each of the 'four seasons'. Hence the name. The result of more than nine years breeding research, It has a pale pinkish skin and a creamy, waxy consistency. It is also lower in carbohydrate than many mainstream potatoes.
