SALAD OF AYRSHIRE ROYALS, FETA & WATERCRESS, YOGHURT DRESSING - 25 minutes

SERVES 4

INGREDIENTS

  • 1kg Ayrshire Royals
  • 1 Bunch of Watercress trimmed
  • 250g Cherry Tomatoes halved
  • 250g Feta Cheese diced
  • 100ml Low Fat Yoghurt
  • 1tbs White Wine Vinegar
  • 1 Pinch of Sugar
  • Salt and Freshly Ground Pepper

METHOD

  1. Cook the potatoes in lightly salted boiling water until tender, drain and leave to cool.
  2. Toss the potatoes,tomatoes, feta and watercress in a bowl and season. 
  3. Whisk the yoghurt,vinegar and sugar together. 
  4. Arrange potatoes in serving bowl, spoon yoghurt over the salad just before serving.
